Jollof rice: the African dish that everyone loves but no one can agree on

                               

Please note that using any rice other than Basmati to cook jollof is fraudulent behaviour.  Do not under any circumstances trust anyone who tries to tell you that easy cook rice is the way forward - they do not know their own minds.
